Sometimes it is necessary to bake something other than the norm, and I wanted to try something I have never made before so today I had a go at whoopie pies. A big hit in America and actually possibly easier to eat than a cupcake because of their 'sandwich' nature, I can tell you they are delicious! I made mine with melted chocolate in the middle, next time will make the traditional buttercream frosting. Some people close to me will be very happy later...
